Summer Bounty - Salsa Edition
theMangoTimes is written and produced in the heart of California's great central valley. The land of fresh guacamole, fresh chopped cilantro and salsa that will rock your world!
Fletch's Roasted Corn Guacamole
Ingredients
4 avocados, pitted and rough chopped (Not creamy)
3 ears corn, roasted and kernels removed (I use a blow torch!)
1/2 red onion, finely chopped
1/2 white onion, finely chopped
1/2 jalapeño finely chopped
1 cup of grape tomatoes quartered
1 1/2 cups black beans (canned)
1/2 cup jicama finely chopped
1 handful cilantro chopped
1/2 fresh lime juiced
Salt/Pepper to taste
Directions
Combine the ingredients in a bowl and mix well. Season to taste with salt and pepper. If it gets too salty you can add a pinch of sugar to enhance the flavor of the corn/tomatoes.
